Twice-Roasted Hot Honey Sweet Potatoes

INGREDIENTS

2 lbs sweet potatoes; washed and dried 1⁄2 Cup honey

1 Tablespoon red pepper flakes

1⁄2 Teaspoon salt (optional)

DIRECTIONS

Preheat the oven to 350°F

• Roast sweet potatoes whole for 1 hour and allow to cool to room temp

• Increase oven temperature to 400oF

• Using your hands, tear the cooked sweet potatoes into rustic chunks, about the

size of a golf ball

• Combine the honey, salt if using and red pepper flakes and microwave 10

seconds to loosen and to infuse the honey with pepper flakes

• Drizzle the hot honey over the hand-torn sweet potatoes and toss to combine

making sure to get into the nooks and crannies

• Spread sweet potatoes onto a foil- lined banking sheet and bake 20 min until

tops start to turn golden brown

• Serve warm
