Lime scented jasmine rice

INGREDIENTS

2 cups water

1 teaspoon salt

1 tablespoon granulated sugar

2 cups jasmine rice

2 limes

DIRECTIONS

  • Add water, salt, sugar, and rice into a medium-sized pot, then bring to a boil.

  • Use a zester, microplane, or grater to zest the limes. Slice and juice the limes, then remove any seeds from the juice. Combine the lime juice and zest, then set aside.

  • When the rice starts to boil, stir thoroughly; then reduce its heat to low.

  • Add the lime juice and zest to the rice. Stir again, then cover and simmer 15 minutes.

  • Remove the rice from heat. Let it stand covered 10 minutes, then fluff with a fork. Enjoy!
