Lime scented jasmine rice
INGREDIENTS
2 cups water
1 teaspoon salt
1 tablespoon granulated sugar
2 cups jasmine rice
2 limes
DIRECTIONS
Add water, salt, sugar, and rice into a medium-sized pot, then bring to a boil.
Use a zester, microplane, or grater to zest the limes. Slice and juice the limes, then remove any seeds from the juice. Combine the lime juice and zest, then set aside.
When the rice starts to boil, stir thoroughly; then reduce its heat to low.
Add the lime juice and zest to the rice. Stir again, then cover and simmer 15 minutes.
Remove the rice from heat. Let it stand covered 10 minutes, then fluff with a fork. Enjoy!
